We carry out an in-depth selection of clusters and grapes, which are cold macerated for 5 days. Then, the grapes are allowed to return to the desired temperature and the controlled alcoholic fermentation begins with selected yeasts for each varietal. During the process, Dellestages and Remontages are carried out in order to gain concentration of attributes. Malolactic fermentation takes place at the end of the process, which gives the new wine its unique and complex characteristics. Post fermentation, a maceration is carried out, which culminates in tasting, separating the wine from pomace.
In appearance it has black tones and good nuance. On the nose it presents aromas of red fruits, plum, vanilla, smoked and delicate menthol notes. The entry is soft but ample in the mouth, with very good tannic structure, complex and elegant. Long finish.
Ideal with sauced or grilled red meats, lamb - skewered, stuffed pastas and seasoned cheeses.
